Smashed Potatoes and Celery Root with Olive Oil and Chives
(From One Pot Vegetarian Dishes)

* You can easily make this vegan by using soymilk or veggie stock and vegan margarine in place of regular milk and butter.
** Or, you can use more olive oil in place of the margarine; olive oil and mashed potatoes is a spectacular combination all by itself [Martha]

Makes 4 to 6 servings

6 baking potatoes, peeled and cut into eighths
1 small celery root (3/4 pound), peeled and cut into ½ inch pieces
1 ½ tsp butter
½ milk or vegetable broth
½ tsp salt
¼ tsp freshly ground pepper
3 Tb extra virgin olive oil
2 Tb chopped chives or parsley

Fill a large saucepan fitted with a steamer with 1 ½ inches of water. Add the potatoes and celery root to the steamer rack. Bring the water to a boil, cover tightly, and cook, stirring once to rotate the vegetables, until they are soft, about 25 minutes.

In a large bowl, with a potato masher, smash the potatoes and celery root with the butter, milk, salt and pepper, keeping them lumpy. Season with additional salt and pepper to taste.

Mound the smashed potatoes and celery root in 4 warm bowls. Drizzle with the olive oil and sprinkle with chives or parsley. Serve immediately.
